Lettuce Know Your Substitution Preferences!

We take pride in picking the perfect local and organic foods for our customers. All that foraging means we work with hundreds of different suppliers, and once in a blue moon we can't get exactly what you ordered. When that happens, we try to give customers a call so they can tell us whether to substitute something similar, like Fuji for Gala apples, etc. Starting this week, you can tell us your substitution preference in the Delivery Information area of your Greenling.com account. When you log-in, you can select any of the following options:

  • Substitutions are okay
  • Local for Local only. Substitutions are okay, but when I order local, only sub with local or don't substitute
  • Call me first (at the number in the Packing Notes)
  • Don't make any substitutions at all
  • Other (please specify in Packing Notes)

When you have a little spare thyme, update your account page to lettuce know which of substitution preferences strikes your fancy. We think this will be a berry easy way to make your grocery shopping even more convenient!

Baby You Can Ring My Bell... Pepper

Red Bell Pepper 06

Bell peppers are the divas of the produce world. Botanically a fruit, but a vegetable to the culinary minded; beautiful and tasty, sweet and savory- they really do have it all. Even the staunchest veggie doubters can often enticed by the bold, rich color palette of the bell pepper.

Not that we play favorites around here, but the red variety are hard to beat. They’re packed with flavor AND nutrients. Fun fact - red bell peppers are actually just green bell peppers that were allowed to reach maturity before they were harvested. They’re so much sweeter because they are allowed to vine ripen. Despite being the same pepper, red bell peppers also contain 100% more Vitamin C than their green siblings. Move over citrus- you're not the only way to beef up on immune-boosting Vitamin C!

Over in the fields of our local farmer heroes at Walnut Creek Farm, folks are hard at work harvesting these nutritious bad boys for your Local Box next week. If you thought store-bought red peppers were good, wait until you taste the local ones, fresh from the fields. It might a bit of a game-changer for your palate, just sayin'. And if you weren't planning on ordering a Local Box next week, but this article has you salivating, don't fret - these red beauties are available for order individually as well.

We suggest storing the peppers in a sealed bag- they’ll last up to a week and a half in your fridge. So you'll have plenty of time to plan out a delicious stuffed bell pepper banquet or fire up that grill and serve up some bell pepper fajitas, Don’t have time to plan? The bell pepper is still your best bet. Just cut up those local beauties and dip them in local hummus or organic ranch dressing for a tasty snack on the go.

We like them so much that now we've got that disco song stuck in our head, and we're not even mad about it.

Marinated Roasted Peppers with Capers and Mozzarella

Recipe adapted from TheSmittenKitchen blog

Ingredients

Roasted Peppers Capers 06 06

  • 2 bell peppers (mix the colors up if you're so inclined)
  • 1/4 pound ball of fresh mozzarella, sliced
  • 1/8 cup red wine vinegar
  • 1 clove garlic, minced
  • 1 tablespoons extra-virgin olive oil
  • 1 tablespoons capers, drained
  • 1 tablespoons flat-leaf parsley, chopped (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

Preheat the oven to 400 degrees and line peppers (whole) on a large baking sheet and roast them for 45 minutes to 1 hour, using tongs to rotate them every 15 minutes. You want them to cook for the full amount of time to make the skin easier to remove. When they’re fully roasted, cover them with a sheet of foil and give them a few minutes to cool.

When they’re cool enough to handle, remove the skins. Remove seeds and slice sections of pepper into strips. Toss peppers with red wine vinegar, garlic and a few pinches of salt. Cover and let marinate for 1-4 hours in the fridge.

To serve, arrange peppers on a plate. Adjust seasonings, adding salt, freshly ground black pepper or additional vinegar, to taste. Drizzle with olive oil, sprinkle with capers and parsley and arrange mozzarella over salad. Serve with some crusty bread and a glass of wine!
