Greenling is expanding!

After growing the local food system in Austin for 6 years, Greenling is going to help our friends up North, too!

We're setting up shop in DFW and couldn't be more excited. We're making friends with all the North Texas local and sustainable producers we can find, and later this month will start delivering their local goodness all over the DFW Metroplex.

Eat Drink Local Week- Results Are In!

Greenling participated in Edible Austin's Eat Drink Local Week again this year, with "grape" results! Our Local Box was featured on the list of Eat Local Week Restaurants and Markets, and as part of the festivities, we promised to donate 5% of Local Box sales that week to Urban Roots and the Sustainable Food Center. The sales totals are in, and our donation to these local food champions was over $600!

So many great events that week, but our favorite was the Urban Farm Bicycle Tour in early December. We had a blast hanging out at Urban Roots Farm, where over 200 riders stopped by, braving the rain and cold for local food! Mellow Johnny’s Bike Shop was on hand to fix any flat tires, and we served up local apples, honey and cheddar cheese to hungry bikers.

Cheers to Edible Austin for hosting yet another great week for local food- can't wait until next year!

Rutabaga Me Crazy

Once upon a time in Sweden, a cabbage and a turnip had a baby. They named it “Rutabaga,” and a nutritional superhero was born! This loveable hybrid is one of the most nutrient-dense root vegetables available in winter. It’s chock full of fiber, potassium, and vitamin C, and thanks to our farmer heroes at Just Peachy Farms, it’s going to be in the Local Box next week!

Just Peachy’s rutabagas are small and tender, with a mild flavor. They are still in the ground as we speak, and farmer Billy Moore will be harvesting them over the weekend just in time for us to deliver them to you! In preparation for the harvest, Billy shared with us one of his favorite rutabaga recipes: Mashed Rutabagas.

Rutabagas are frequently prepared in a hash with other root vegetables, in pasties, or even alongside potatoes in stews. If you don’t feel like eating your rutabaga next week, no worries! These babies will keep for 2-3 weeks in the refrigerator crisper.

Besides being a potassium powerhouse, the rutabaga is a party vegetable! People in Ireland and Scotland have been carving them as Halloween lanterns for centuries, and legend has it that placing a carved rutabaga in your windowsill will keep evil spirits away. A little closer to home, the rutabaga is the star of the “International Rutabaga Curling World Championship” in Ithaca, New York.

Heads up- as we prep our website to serve 2 regions (see sidebar to the left for more on that!), we'll be making minor changes to the way some of the products are named. All local meats will undergo a name change- the farm they hail from will no longer be in the title, but will remain in the product description. We have to do this for boring technical reasons - but don't worry, you'll still be getting the same great local meat you know and love! Please 'lettuce' know if you have any questions.

Fresh, Prepared Meal Selection for this week:

Dish #1 - White Bean, Broccoli & Greens Soup (1 pint - serves 2 as a side)
A soothing soup for this wicked cold-warm-wet-dry-allergy infested winter. Feel good pulling up to a bowl of tender white beans, organic broccoli, hearty winter greens & tomatoes for a break from this crazy weather. Perfect with some crusty bread!

Ingredients: white beans, water, organic onion, garlic, organic broccoli, organic greens, organic tomatoes, extra virgin olive oil, organic herbs, spices, kosher salt, pepper

Dish #2 - Root Vegetable Gratin (1 pint)
Root vegetable season is still in full effect and we're taking advantage while we can.  Fresh organic turnips, rutabaga & golden beets sliced-thin, layered with herbs & parmesan, drizzled with cream & olive oil and slow-baked until tender & delicious. Serve it with fried eggs for breakfast, or enjoy it with a salad. 

Ingredients: organic turnips, organic rutabega, organic golden beets, cream, extra virgin olive oil, breadcrumbs, butter, garlic, onion, organic herbs, kosher salt, pepper

In honor of MLK Day, Urban Roots’ youth Interns, will lead volunteers in two MLK Memorial Service Days. Volunteers will do hands-on farm work and educational activities that tie in quotes and the thoughts of Dr. Martin Luther King, Jr. Volunteers will be directly connected to healthy food and participate in making it more accessible to Austin residents in need.

Recipe Corner

Pan-Fried Daikon Cake

Ingredients

Daikon Cakes 06

  • 1 1/2 cups grated Daikon radish
  • 2 teaspoons salt
  • 1 cloves garlic, minced
  • 1/2 red onion, chopped
  • 1 egg, beaten
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chile-garlic sauce (such as Sriracha)
  • 1 1/2 cups vegetable oil for frying

Instructions:

Place the daikon in a large bowl and sprinkle with the salt. Refrigerate for 30 minutes.

Drain daikon. Stir in the garlic, onion, egg, bread crumbs, pepper, paprika, and chili garlic sauce. Mix well. Form into 8, small round patties.

Pour oil into a large skillet. Heat over medium heat. Fry patties in the hot oil until firm and nicely brown, about 3 minutes per side. Drain on paper towels and serve.
