Vegan Migas (Serves 4-6)
Contents:
organic garlic
organic Mexican seasoning
nutritional yeast
organic onion, yellow
organic poblano peppers
organic tomato, slicing
organic tofu
organic corn tortillas
organic salsa
Time: 12 minutes
Equipment: 2 frying pans, bowl, whisk, spatula
1. Heat a small amount of oil in a medium frying pan over medium-high heat
2. Add garlic, onions, peppers and tomatoes to pan and sauté until they soften and slightly brown
3. While sauteing, drain tofu and squeeze lightly between two paper towels to remove excess moisture
4. Crumble tofu into pan and add Mexican seasoning and nutritional yeast
5. Cook thoroughly, about 8 minutes
6. Heat the second pan over medium heat. Heat tortillas, about 1 minute on each side.
7. Plate cooked tofu mixture and serve with salsa and warmed tortillas on the side
8. Salt and pepper to taste
