Vegan Asian Lettuce Wraps (Serves 2)
Contents:
organic cashews
organic tempeh
organic stir-fry sauce
organic bibb lettuce
organic shredded carrots
organic green onions
Time: 20 minutes
Equipment: 8-10inch skillet or pan
Instructions:
1. Heat 8-10 inch skillet over medium high heat. Add cashews
2. Toast cashews until lightly brown, stirring several times. Remove cashews from pan
3. Add small amount of vegetable oil of your choice. Remove tempeh from package and dice into manageable bites. Add tempeh to pan**
4. Add stir-fry sauce and cashews and cook about 5 minutes, stirring occasionally, until most of the liquid is absorbed
5. Remove leaves from the head of bibb lettuce, rinse and pat dry if necessary. Stack smaller leaves inside larger leaves for added wrap strength, if desired
6. Spoon tempeh mixture onto each lettuce stack and top with shredded carrot and green onions. Makes 8-10 wraps
**optional: marinate diced tempeh in the stir fry sauce prior to cooking; just add the sauce and tempeh that has been marinating into the pan at the same time**
