Sausage Onion Hash with Greens (Serves 2-4)
Contents:
organic pork sausage
organic onions
organic potatoes
organic greens
organic garlic
Prep time: 20 minutes
Equipment: Large Skillet with lid, cutting board
Instructions:
1. Chop potatoes into ½ inch dice (this is a small dice so the potatoes will cook faster)
2. Heat Skillet over medium heat, add vegetable oil to coat bottom of pan generously
3. Add diced potatoes and cook covered for about 8-10 minutes, stirring twice, until potatoes are almost cooked through
4. While potatoes are cooking chop 2 sausage links, re-served from day 2, by slicing them into 4 slices lengthwise then into ¼ inch chunks by cutting across the slices
5. When potatoes are almost cooked through add onions and sausage, season generously with salt and pepper, and continue cooking, uncovered about 5 minutes until onions are translucent
6. Add chopped greens, stir, and cook covered about 5 more minutes, stirring each minute until greens are wilted but still bright green
