Garlic Ginger Stir-Fry with Rice (Serves 2)
Contents:
organic rice
organic cashews
organic seasonal vegetables
organic house-made garlic ginger sauce
organic green onions
Hands-on Time: 30 minutes
Equipment: Saucepan, skillet
Instructions:
1. Bring 2.5 cups of water to a boil. When water is boiling, add rice and allow to return to boil uncovered. When water begins to boil again, reduce heat to low-medium, cover, and cook for 20 minutes. Do not remove lid while rice is cooking. After 20 minutes, remove from heat, leave cover on and let stand for 5 minutes
2. Heat a large skillet. When skillet is hot add cashews and cook 1-2 minutes stirring until lightly browned. Remove cashews from skillet and set aside
3. Add vegetable oil to skillet to coat bottom. When oil is hot, add stir fry veggies. Sauté until tender and lightly browned, 10-12 minutes; just before vegetables are done, add stir fry sauce, toasted cashews, and toss well in pan
4. Serve veggies over rice. Garnish with sliced green onion
5. Season stir-fry to taste with soy sauce, tamari or sat and pepper.
