Spinach Pesto Pasta with Tomatoes and Kale (Serves 2)

Vegan spinach linguini
sliced cherry tomatoes
Sliced red onion
Equipment needed: Saucepan, 8-10 inch skillet, colander
1. Bring two quarts of water to a rolling boil in a saucepan.
2.While water is heating up, heat a tablespoon of oil in the skillet. When oil is hot, add onions and cherry tomatoes and saute until lightly browned.
3. When water boils, add pasta and cook 2-4 minutes, until it is al dente.
4. Drain pasta and add to skillet along with kale and half of spinach clamshell. Toss to mix with vegetables.
5. Add pesto to the pasta mixture and toss to coat. Continue to cook until pesto is heated through and greens are slightly wilted.
