Watercress: Recently tagged as the hot new superfood, expect to start seeing watercress recipes all over the place. Paired with avocado, you’ve really got a 1-2 punch! Pair the cress, avocado, an apple, vinegar, mustard, and tamari or coconut aminos for a flavorful salad! More on Pinterest.
Mint: Even if you’re not a big smoothie fan, you won’t regret trying an Avocado & Mint Superfood Smoothie. Add your choice of frozen berries, fruit juice, sweetener (try Goodflow Honey!), & yogurt or coconut cream.
Butternut Squash: Looks like you’ll be putting that blender to good use this week! Throw cubed, cooked butternut squash into a blender with broth, butter or oil, and your favorite spices for an easy, soupy puree. Heat on the stove for 5-10 minutes after blending to marry the flavors.
Collard Greens: Not just a staple of Southern cooking. Vegan chefs have been using collards in place of wheat & rice wraps for ages! Simply blanch briefly and fill with your favorite ingredients. Check out Pinterest for more
