Dripping Springs, Tx

Located in Dripping Springs, Pure Luck Dairy is known for their award winning goat cheese, as well as other cheese such as feta, bleu, and chevre. But they're so much more than cheese. Founded in 1979 by Sara Bolton, the farm became one of the first Certified Organic farms recognized by the state of Texas. They also grow a wide variety of herbs that can be found all over Central Texas.

We especially love Pure Luck because I (Mason) went to high school with Amelia. It's so great to see Amelia get into the same industry I've chosen. The American farm is not disappearing...maybe it skipped a generation, but people like Amelia are ensuring we'll have Organic goodness for years to come.

New Yelp Review (6/19/09)

For the past year, I've bemoaned my inability to make it to the farmer's market on Saturday mornings. Excuses, excuses.  Greenling's promise to bring it right to my door was something I considered for a while before taking the "Local Box" plunge a few weeks ago.  

I know it's dorky, but coming home to a big green box of mystery food on my doorstep every Friday afternoon makes my day.  My kiddo is also excited to see what is inside, so it's become a ritual to unpack its contents and talk about what we're going to make.  It's forced me to look up new recipes and use veggies I wouldn't ordinarily buy (like sorrel, green tomatoes and corn) and provided me the best batch of green beans I've ever eaten.  My one complaint is all the carrots - not my favorite vegetable when not in cake form -- but that's just a personal taste issue.  <carrots are done, btw>

Please be aware that this heat is affecting local farmers in a bad way! Chickens aren't laying as many eggs, fall crops can't get started, and many vegetables are cooking right in the fields. Local prices are on the rise and Central Texas may see significant supply shortages if this weather keeps up.

We'll get a local chef to prepare some dishes with in-season Greenling Organic products and invite Greenlings (that's you) to prepare their own, too. The group will decide which ones get to go in the Greenling Central Texas Seasonal cookbook (name to be improved later) and the creator will get featured in the book.

So bring your best recipes and let Greenling make you famous. Or not...it is Austin, after all so there's no pressure or dress code or any of that. All you really need to bring is yourself. We'll also have some Greenling beverages, desserts, and some great company!

Rosemary Peach Lemonade

Recipe of the Week

Ingredients:

  • 6 small sprigs fresh local rosemary, plus more for garnish
  • 2/3 cup honey
  • 1 cup water
  • 1 1/2 cups good-quality peach nectar or fruity white wine, such as Reisling
  • 3 ripe local peaches, pitted and sliced into thin half-moons (about 18 slices each)
  • 1 ice cube tray frozen lemon juice (12 cubes equals 1 cup of juice)
  • 1 to 1 1/2 cups water

Instructions:

In a medium saucepan, combine the rosemary sprigs, honey, and water, and bring to a simmer. Let cook for about 10 minutes until slightly thickened and well-infused.

Remove from heat and strain. Discard rosemary sprigs. Let cool before using.

In a large pitcher, combine cooled syrup, peach nectar, peach slices, and lemon juice ice cubes. Add enough water (about 1 to 1 1/2 cups) to top off, leaving room for additional ice cubes to serve.

Add more ice right before serving. Serve a fresh rosemary sprig in each glass.

Easy Oven-Baked BBQ Brisket (for us city-folk)

Ingredients:

Instructions:

Preheat oven to 325 degrees F (160 degrees). Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan. Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound. Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.
