Glazed Carrots Side Kit

An old favorite made ridiculously easy. Brown sugar, butter and carrots - what could be better?
Contents:
organic carrots
organic unsalted butter
organic brown sugar
organic lemon zest
organic parsley
Time: 15 minutes
Equipment: small pot with lid, colander
Instructions:
1. Place carrots and ½ inch water in a pot and cover
2. Bring to a boil, then reduce to a simmer and cook 5-7 minutes until just tender
3. Drain the carrots into a colander, set aside
4. In the same pot used for the carrots (now empty), add the butter to melt over medium heat
5. Add the brown sugar and lemon zest. Stir mixture until sugar is dissolved, about 2-3 minutes
6. Add drained carrots back into the pot and cook 2-3 minutes, stirring a few time to allow the carrots to be coated with the glaze
7. Season to taste with salt and pepper and garnish with parsley
