This kit contains portioned and prepped ingredients and instructions for roasting the turkey (drippings can then be used for gravy):

Contents:
organic herb butter
organic yellow onion
organic celery
organic chicken broth
organic wheat flour

Roasting Turkey
Prep Time: dependent on turkey size
Equipment: roasting pan with rack, metal skewers or kitchen string

1. Set oven rack at lowest position in oven and preheat oven to 450°F
2. Rinse turkey inside and out; pat dry
3. Sprinkle turkey cavities and skin with salt and pepper. Spread 8 tablespoons (half cup) herb butter over outside and inside of turkey
4. Put onion and celery inside turkey cavity
5. Fold neck skin under body and secure with metal skewers, then tie drumsticks together with kitchen string and tuck wings under body
6. Place turkey on rack set in large roasting pan
7. Add 1 cup water to pan and roast without basting, rotating pan halfway through roasting, until meat thermometer inserted into fleshy part of thighs registers 170°F (Approximately 2.25-3.75 hours for a 16 pound bird)
8. Remove turkey from roasting pan and set on platter to rest for 30 minutes

Making Gravy
Prep Time: 20 minutes
Equipment: fine mesh sieve, large measuring cup/bowl, large pot

1. Pour pan juices through a fine-mesh sieve into a large measuring cup (do not clean roasting pan), then skim off and discard fat from pan juices
2. Straddle roasting pan across two burners, then add 1 cup water and deglaze roasting pan by boiling over high heat, stirring and scraping up brown bits, approximately 1 minute
3. Pour liquid from pan through sieve into same cup containing pan juices
4. Add chicken broth to measuring cup
5. Melt remaining 8 tablespoons (half cup) herb butter in a large pot and gradually stir in flour
6. Cook roux over moderate heat, whisking, for 5 minutes
7. Add stock mixture in a stream, whisking constantly to prevent lumps, then bring to a boil, whisking occasionally
8. Stir in any turkey juices that have accumulated on platter and simmer, 5 minutes
9. Season with salt and pepper
