Guajillo is a wild desert bush that is native to Southwestern Texas and Northern Mexico, a member of the "acacia" plant family. Guajillo has an extremely delicate and distinctive taste that is both unique and extraordinarily flavorful.
The plant blooms in March and early April, and it is during this time that the bees seek out the little blonde blossoms that give Guajillo both its delicious flavor and beautiful color. The honey is then cold centrifuge extracted, retaining the beneficial antioxidants and amino acids that would otherwise be depleted during a high temperature filtration process. The honey is then bottled in a one pound Italian green glass jar, which is in the shape of an ancient Etruscan olive oil vessel.
