Grilled Okra Makes Everything Alright

 

Baby you can ring my bell…pepper! The bell peppers from our farmer heroes at Just Peachy and Acadian Family Farm are real beauts, and are delicious sliced raw with hummus for a protein packed healthy snack. Or, disco your way into the kitchen and try some delicious locally inspired dishes for this week’s Local Box Meal Plan.

 Meal One: Start off light with a thinly sliced zucchini and parmesan salad.

 Meal Two: For something a little different, try quinoa stuffed bell peppers alongside fresh, slow cooked pinto beans!

 Meal Three: Butternut squash and sweet potatoes are delicious by themselves, but combining the two in a hearty gratin will create a decadent vegetarian treat. This recipe yields great leftovers so is perfect for a week when you don’t have much time in the kitchen.

 Meal Four:  If there’s any publication that knows okra, it’s Southern Living.  Check out their recipe for peppery grilled okra paired with a fresh basil and lemon dipping sauce.
