Often times the salad gets a bad name as a boring substitution for a real meal, but here at Greenling we know the salad can be so much more than a mere side dish. So this week, I’ve dedicated the Local Box meal plan to the wonder and versatility of the salad.
Here’s what I’ll be tossin’:
Meal One: For salad numero uno don’t be afraid to mix things up-like those ripe peaches and cherry tomatoes. A peach and tomato salad with 1/4 a cup of microgreens tossed in, will be a delight for your taste buds.
Meal Two: Combing the sweetness of blueberries and the crisp freshness of a cucumber is always a good idea. Try a blueberry cucumber salad for a happy union between sweet and crisp.
Meal Three: Stop three on our savory salad tour- roasted potato and okra salad. I won’t have sweet potatoes on hand so for this recipe, I’ll just take out them out and add more local red potatoes.
Meal Four: To finish out the week, I’ll be serving up a southern pea and squash salad. The recipe calls for canned black eyed peas, but fresh southern peas will be a tasty local substitution.
