DFW Local Box Meal Plan June 11-15

I saw the mixed hot peppers in this week’s Local Box and my heart leaped for joy. In fact, the whole box had me a little bit love struck. It’s inspired me to step out of the box with my culinary creations and spice up my eating routine! Too many times I’ve found myself stuck with the same ol’ recipes-but not this week. This week I’m mixin’ it up.

Meal One: Hold on to your socks-it’s about to get spicy. Take a run of the mill hash brown recipe and substitute 1 cup of scallions for 1/2 cup of diced hot peppers (we need to save some for later) and you’ve got one heck of a breakfast!

Meal Two: I’ve been inspired by Greenling’s loyal Facebook follower, Raini L., to try vegan gumbo! I’ll probably substitute southern peas from the Local Box instead of kidney beans. Yum!

Meal Three: With the remaining hot peppers and those scrumptious peaches, I’m going to make peach salsa. Yes, I did say salsa. 

Meal Four: Depending on your delivery day, you might get pickling cucumbers or summer squash. Luckily, there’s no way to be disappointed with either! If you get pickling cucumbers, here’s a delicious recipe to pickle those babies and if you got summer squash, then definitely try sauteing them!
