The mango in this week’s Local Box is the first sign that summer is coming and I couldn’t be more thrilled! Those green bins will soon be over flowing with delicious, local fruits! But for now we have to cherish what’s left of our winter root veggies before they’re gone for the year. So this week it’s all about using the last of those delicious winter crops while embracing the coming heat!
Here’s what I’ll be fixin’:
Meal One: Grilled mango next to a beautiful grapefruit salad is the perfect way to start my week. The arugula in the Local Box are microgreens, but will work great when paired with a bed of lettuce for the salad. Enjoy this lovely weather and grill that mango under the beautiful Texas sky!
Meal Two: Soup is one of those wonderful dishes that fits well with any season and this spring onion soup recipe will look great on any spring table.
Meal Three: I’ll saute up those red potatoes and mushrooms and serve them next to grilled chicken for my fiance on our patio.
Meal Four: One of Greenling’s own bloggers has an awesome recipe for roasted radishes and carrots, I’ll just throw in some turnips and tada! Delicious!
