DFW Local Box Meal Plan April 16-20

There are some wonderful colors filling up this week’s Local Box! Deep green poblano peppers, red and yellow bright light chard, orange carrots and so much more! So for this week, I’m going to focus on recipes that showcase this beautiful rainbow of local goodness!

Here’s what I’ll be cooking:

Meal One: Sauteed chard with shiitake mushrooms will not only be delicious for my belly, but for my eyes as well! Instead of fennel, I’ll cut up those giant spring onions and use brown rice instead of farro! Yum!

Meal Two:Roasted poblano peppers with onions and cream?! Sign me up!

Meal Three: Those radishes are such a beautiful redish pink, they’ll be visually stunning glazed with honey! The glazed radishes will be delicious, but not quite filling so I’ll whip up Martha’s delicious roasted carrot and beet salad to complete my meal!

Meal Four: By the end of the week, that grapefruit is going to be calling my name. So sweet and juicy! A grapefruit salad served over a bed of red leaf lettuce with lime dressing will make your mouth water and your eyes dance!
