DFW Local Box Meal Plan May 28-June 1

I thought those blue skies would last, but I was oh so wrong! The storms have hit North Texas and  dropped rain and maybe hail (hopefully not!) on us, but rain in the fields means tasty crops on our plates. This week I’ll be focused on meals I can stay inside and cook while the storms pass.

Here’s what I’ll be fixing:

Meal One: I never get tired of roasted potatoes and if I add in a little dill or rosemary, they become absolutely impossible to resist. Toss in a cream pea salad   to round out the meal and fill your belly.

Meal Two: A new twist on an old favorite- shiitake mushroom caesar salad will have your family begging for more. Shiitake mushrooms add just the right amount of meaty-ness to make a simple salad into a main dish.

Meal Three: Need a break from roasting veggies, but you don’t know how to use squash? Have no fear, bread is here!

Meal Four: All the fruit and berries in the Local Box this week will be perfect for a local fruit salad. Mix the pealed, pitted fruit and blueberries together with some Greek yogurt and honey  and you won’t regret it.
