DFW Local Box Meal Plan May 21-25

Plums and peaches all in one Local Box? Plus highs in the 90s? There’s even a squash with ‘summer’ in it’s name! The evidence is irrefutable- summer is definitely upon us here in North Texas. So in celebration, I’ll be cooking up some delicious recipes utilizing my Greenling summer harvest.

Here’s what I’ll be fixin’:

Meal One: I’ll begin the week by frying up some delicious summer squash fritters paired with either BBQ chicken or oven baked tilapia, depending on what I have on hand.

Meal Two: After all that cooking, I’ll want something raw and fresh. A bok choy salad with grape tomatoes is a great way to not cook, but still serve up a filling meal.

Meal Three: Add a little bit of bacon and you really can’t go wrong with cream peas. 

Meal Four: To finish out my week, I’ll reward myself. Plum and peach jam on toast for breakfast! I’ll probably cut that recipe in half and still have enough to feed myself and fiance.
