It’s weeks like this that make me want to curl up under a blanket and watch Big Bang Theory re-runs all day. So I plan on keeping my meals delicious and home-made, no need to go out in this stormy mess! Rain is good for farmers and it also gives us folks an excuse to stay in with some homemade cooking.
This week’s Local Box is ripe with potential and inspiration for some homemade culinary creations! Look at that, it even inspired me to rhyme.
Here’s what I’ll be fixin’ this week:
Meal One: The shiitake mushrooms in this week’s box are perfect for a raw kale and mushroom salad. I’ll probably substitute normal sea salt for celtic sea salt and shred up some of the hydro bibb lettuce to finish it off this tasty salad.
Meal Two: For something a little heartier I can make those turnips into delicious scalloped turnips! Sprinkling some of my favorite cheese on top will only add to the turnip-ey wonder of this dish.
Meal Three: Blue potatoes can be off putting at first, due to their color, but rest assured they are packed with nutrients and are a delight for your taste buds! This twice baked potato recipe by Claire Robinson can easily be adjusted by subbing blue potatoes for gold potatoes for a dish that is both colorful and delicious. I’d also add in some finely chopped jalapenos for a little spice!
Meal Four: And finally, to finish off the week a baby bok choy and carrot sir fry. I prefer plum sauce to oyster sauce, so if you have a preferred stir fry sauce feel free to use it on this easy stir fry recipe!
