DFW Local Box Meal Plan Feb. 13-17

We’ve been so inspired by all the photos you guys have shared with us on Facebook & Twitter! It’s so fun to see what creative ideas you all have come up with to serve fresh & nutritious local veggies. Keep it up, and remember if the meal ideas included here don’t strike your fancy, a fellow local chef is likely sharing something you might like. Have fun in the kitchen this week DFW, and if you discover something amazing, please keep on sharing!

Here’s what we’re cookin’ up this week:

Meal one: That tender hydroponic lettuce from Young’s Greenhouse won’t last too long in the fridge, so we’ll use it first thing. Combined it with some spring onions and radishes (don’t toss the leaves! see below) , add some grass fed beef and you’ll have a lovely Grilled Beef and Spring Onion Salad.

Meal two: Those radish leaves we told you to save from meal one will be the star here – Radish Leaf Pesto is on the menu- toss with your favorite pasta, and serve with a simple green salad. (Add that beautiful tomato from Lemley’s if you do so!) If you’re feeling saucy, why not use those juicy Texas limes for refreshing mojitos to start?

Meal three: It’s time to let those Southern roots shine, or if you’re a transplant, get some Southern cred! Who can resist a recipe called Barbara G’s Braised Collards & Rutabagas? This is a slow cookin’ recipe, so we put it later in the meal plan so you can plan ahead a bit. It’s worth it – serve up with some cornbread and you’ll be in hog heaven, as my Granny would say.

Meal four: We are keeping it simple with a recipe from our friends over at Urban Acres: Turnips, Broccoli, & Sausage. Less than 20 minute cook time from bin to table, and simply delicious. Make sure you give Full Quiver Farm’s sausage a try sometime, it’s local and amazing!

Meal five: Time to bake that spaghetti squash. It’s not the most common veggie, but it really is awesome and so easy to prep. We’re making Baked Spaghetti Squash with Garlic Butter. As simple as slice it, bake it, scoop it, toss it. Irresistible!
