Someone mentioned on Facebook this week that this week’s Greenling Local Box is full of round things. I had a lot of fun arranging the fruits and veggies into rows for the picture this week, and until I read that comment, I couldn’t put my finger on what tickled me so much about this particular grouping of produce.
You can tell from the distinct shortage of leafy greens in the box that we are deep in the throes of summer heat. Thankfully our friends at Bluebonnet Hydroponics are growing beautiful lettuce indoors so that we can have some leaves in our meal plan! This heat isn’t all bad, though. It’s making for some ultra-sweet peaches, juicy melons, and awesome okra. Here’s what I’m making with the bounty:
Meal one: Those peaches are ripe and ready to eat, so I’ll be using them all up in this first meal of the week. No recipe here, just a simple salad of lettuce, sliced peaches, tomato wedges, sliced red onion, and Chevre. I’ll top the whole thing with some toasted pecans and balsamic vinaigrette dressing.
Meal two: A Local Box with okras, tomatoes, peppers, and onions? Must be time for stewed okra and tomatoes! This one-dish meal is beyond easy to prepare, and tasted great with pita bread on the side.
Meal three: There’s nothing wrong with eating dessert first, especially if it’s baked pears with goat cheese. For an entree, I will serve baked chicken and onions along with sliced cantaloupe on the side.
Bonus: if there’s extra cantaloupe and pears or peaches, I want to use those to experiment with smoothies. These hardly need a recipe– just combine one part yogurt (or ice and soymilk) in a blender with one part chopped fruit. Yum!
