Central Texas Local Box Meal Plan, April 16-20

As April showers bring May flowers, this weeks Local Box brings some beautiful produce that you have probably cooked with before. Why not venture into foreign lands and try some surprising new ways to cook your favorite local produce.

Menu 1: If you are tired of roasted beets, try a spin on burgers with this pumped up Beet Burger recipe.

Menu 2: A twist on coleslaw will leave you wanting seconds. Try this Lime and Peanut Coleslaw as a side or as the main dish.

Menu 3: Take a trip to Morocco with an Orange and Radish Salad. Serve this beautiful and fragrant combination over the mixed greens!

Menu 4:  Feeling adventurous? These Mushroom Lettuce Wraps are sure to not disappoint. Garnish them with the spring onion and they will look like you ordered them from a fancy restaurant!

So far, I have made some vegetable juice with the kale, carrots, and beets. Tonight, I think I will make the beet burgers you linked to, and later on this week I am going to try my hand at some Ethiopian dishes. So, the mixed greens, cabbage and onion are designated for that meal! Everything is so fresh! And now I have a dill plant in my herb garden!
