I say this almost every week, but I think this Local Box is the prettiest one of the whole year! Check out the colors on those peaches and red onions– they’re glorious! All the beauty is just in time for a Memorial Day cookout I’m hosting over the weekend. I’m saving practically my whole Local Box for that party. However, I’ve broken it into meals here for convenience.
Meal One: Grilled Bratwurst and Grilled Red Onions with Cream Pea Salad on the side.
Meal Two: Shaved Summer Squash Salad with Kale, Feta, and Chickpea Salad. I know two salads are too much for some families to eat in one sitting, but the textures of each of these are pretty different. The summer squash salad is almost like a cold pasta dish, since the squash is sliced so thin. The kale salad is more traditional, leafy with a great Greek dressing and chickpeas on top for protein. If you get radishes, slice ‘em up and put them in the kale salad. If you get beets, Easy Pickled Beets are a snap to make, and they’re nice to have on hand in the fridge for snacking.
Meal Three: This dish is not a cookout meal– it’s an Indian recipe that I’ve been eyeing for awhile: Bihari Green Beans Masala. Although the flavors look tasty and complex, it calls for common pantry ingredients and looks easy to prepare, too. If the limes haven’t disappeared into margaritas by the time I’m cooking this meal, I’ll use them to make Cilantro Lime Rice. Otherwise, plain brown rice will suffice!
