Thanksgiving Meal Plan

Despite Thanksgiving being a one-day holiday, any one that has ever prepared the meal knows that it is a week long process. Here at Greenling, we like to make meals as easy peasy as they can be, so here is a collection of some great Turkey Day recipes. We tried to incorporate as much of our great local produce as possible!

The following recipes follow the usual Thanksgiving table more or less:

Mashed Potato Dish: Whenever I’m mashing potatoes I always ask myself cheese or no cheese? So here are two recipes, one without cheese (but with roasted garlic) or one with cheese (goat cheese and caramelized onions) so that you can ask yourself the same question.

Sweet Potato Dish: Some people live for the sweet potato casserole topped with marshmallows, but it’s not my thing. Instead, I think I’ll try out these chipotle mashed sweet potatoes or this sweet potato vichyoisse.

Green Bean Dish: Roasting vegetables gives such different depth to your side dishes. This green bean dish from Fine Cooking is a simple roasted bean dish topped with Parmesan and pine nuts. The fact that the green beans were grown and harvested right down the road makes it even more delicious!

Stuffing: Stuffing is fun because it is quite the kitchen sink sort of dish. Here is a simple stuffing that you can add all of your favorite veggies to: mushrooms, carrots, and more. My mother always adds the pecans that litter her backyard and some poblanos.

Salad: While the salad usually takes a back seat to potatoes and cranberry sauce, this salad with local arugula, goat cheese, and pear will change your mind.

Cranberry Sauce: 
Everyone has their own idea of what cranberry sauce should be like, so I am just going to offer smitten kitchen’s small ode to the turkey’s best friend, cranberry sauce.

Turkey: The bird is a beast that must be dealt with a gentle hand. My favorite Thanksgiving turkey is the one my dad smokes outside. Though it might not be traditional, it fits perfectly with my Texas family. However, here is a recipe for an Herb-Roasted Turkey with Pinot Noir Gravy that will woo all of your guests if the smoker isn’t your thing. 

Pecan Pie:  My dad loves pecan pie so it is always the first pie to have a spot with the pie assortment. Because of this I have made a lot of pecan pies, and while I love chocolate in my pecan pies, this one from Cooking Light takes the cake (or pie..).

Thanksgiving Delivery Schedule Changes

We’re delivering on a different schedule during the week of Thanksgiving so that everyone’s groceries arrive in plenty of time before the big meal! The week of November 19-23, we will deliver your Thanksgiving order TWO days prior to your usual delivery day. For example, if your regular delivery day is Tuesday, we will bring your groceries on Sunday that week. If your regular delivery day is Wednesday, your Thanksgiving delivery will arrive on Monday, and so on.

The deadline to place your order for the week will be noon two days before your delivery day. This is the same policy as usual, but it will be early that week since the delivery days will be moved up. Please remember to update your Turkey Day order early and to put out your bin on the special day. (We’ll be sending reminders in your bin for the next few weeks.) Thanks for sharing your family’s holiday with Greenling– it’s an honor to deliver local and organic goodness early for this special occasion!

Roast Chicken

As the Texas summer starts creeping up on us, my thoughts turn to ways to avoid the heat of the oven.  I have long been a fan of the crock pot to stew a chicken in for soups but did you know you could roast a chicken in the crock pot?  OK, technically it is probably a braise but by just leaving the lid off for the last 30 minutes of cooking time, the skin gets closer to a crispy roast than a flabby stew.  By placing the chicken on top of a bed of vegetables, the juices are used to add flavor to the veggies without submerging the bird in too much liquid.  It is ok if it comes part way up the bird but you want it mostly out of the broth for the crispiest skin.

3-4 potatoes cut into bite size pieces

4-5 carrots cut into bite size pieces

1 tablespoon paprika

1 teaspoon dried thyme

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon dried sage

1/2 teaspoon cayenne pepper

1/4 black pepper

1/2 teaspoon salt

olive oil

3-4 pound whole chicken

Combine the spices to make a dry rub for the chicken.  Rub the chicken inside and out with the olive oil and thoroughly sprinkle with the rub.  You can let this rest covered in the refrigerator for an hour up to overnight if you have time.  Layer the vegetables in the bottom of the crock pot and position the bird on top.  You should still be able to close the lid on the crock pot.  Cook on high for 30 minutes, then switch to low for 6-7 hours.  For the last 30 minutes of cooking, remove the lid.

Kale Chips

My poor kale was starting to yellow.  One too many days in the fridge.  I needed to cook it right away but was not in the mood for cooked greens.  A quick toss with some oil, salt, and sesame seeds and I had a delicious crunchy snack of kale chips.  Even the kiddos will like this one.

1 tablespoon sesame oil or chili oil if you like it spicy

1 head kale, thoroughly washed and dried

salt to taste

1 tablespoon sesame seeds

Preheat oven to 275 degrees. Remove tough stems from kale.  Toss with oil.  Sprinkle with salt and sesame seeds.  Bake for 40-50 minutes, stirring after about 20 minutes.
