Local Chicken Soup for the Soul

Visitors to Angel House Soup Kitchen in Austin recently enjoyed nourishing soups made with local chicken stock, thanks to farmers Jane and Terry Levan of Dewberry Hills Farms. The Levans grow pastured, compassionately-raised poultry on their Lexington, Texas, farm, and their broilers, ground chicken, and split breasts have been Greenling customer favorites for years.

When they began offering boneless, skinless chicken breasts through Greenling a few months ago, customers loved these cuts of local poultry. The Levans ramped up production of boneless chicken breasts, resulting in an abundance of stock bones. As the volume of stock bones grew in the Levan’s freezer, they decided to donate the soup bones to a local charity.

Dewberry Hills Farms reached out to Greenling to help with the donation, and we were thrilled to assist! We offered freezer space and transportation to make the donation possible, and last Thursday, we delivered 200 pounds of stock bones to Angel House Soup Kitchen.

Angel House serves meals to over 500 people each week in downtown Austin; their doors are open to all, regardless of race, religion, or ability to pay. Their volunteers cooked up the stock bones immediately, substituting nourishing, local broth for the canned variety.

We think stories like this epitomize what’s great about the local food system. Thank you to our farmer heroes at Dewberry Hills for making the world a more sustainable, healthy, and wholesome place to live.

Deciphering Milk Dates

Local milk vendors use a different system for indicating milk freshness. The date you see stamped on your carton is a "Best By" date, so we suggest you try to use it by then, or freeze it for use in cooking later. (Make sure to transfer it to a container that lets it expand if you do this)

Organic Valley (nonlocal) milk is ultra pasteurized and therefore lasts longer - the date printed on the carton is a "Sell By" date. Also, the milk will be freshest tasting within 5 days of being opened.

 Puxatawney Phil may have seen his shadow yesterday, but it sure feels like spring in Central Texas! We're getting some of the earliest cucumbers ever from Gundermann Acres, along with aptly-named spring onions. All this sunshine and moderate weather is good for winter crops, too, so leafy greens and citrus are still going strong. 

We are including a Surprise Me! item in every Local Box next week thanks to our Facebook fans and Twitter followers! We reached 8,100 fans on Facebook and 5,000 fans on Twitter this week, and we wanted to celebrate with some Local Box love. Thank you for your support!

You may have noticed a new farm among our ranks recently, and we are happy to welcome Don and Cathy Miller of CAEDA farms, to the Greenling family! You may recognize CAEDA from Austin area farmer's markets; they travel from Elgin each weekend, and now their beautiful produce is also available through Greenling. This week we're getting Napa cabbage, collards, and other wonderful greens from the Millers.

Dish #1 - Chicken Tortilla Soup (16 oz. - serves 2)
Every culture has their own 'chicken soup for the soul' recipe. This one just may be our favorite. Our delicious chicken stock, made fresh every week from Dewberry Farms chickens, is fortified with a fiery blend of dried Mexican chiles and simmered with corn tortillas, giving it that distinct corn flavor. A perfect accompaniment to your dinner, or a whole meal in itself.Gluten-free. Dairy-free.

Ingredients: chicken stock, chicken, organic tomato, organic onion, garlic, corn tortilla, canola oil, chipotle, dried chiles, organic herbs, salt, pepper

Dish #2 - Green Chilie Rice with Cumin Roasted Chicken(16 oz. - serves 2)
 Dewberry Farms is the home of self-proclaimed "Really good chicken", and it ain't no lie. We've tried lots of local birds and Jane & Terry are the best of the best. We citrus-brine their beautiful birds overnight, rub them down in a savory mix of cumin & coriander and oven-roast them until golden brown and delicious. We make stock from the bones, and use that stock to make this delicious rice, infused with fresh herbs & tomatillo salsa. An amped up arroz con pollo, inspired by the best local ingredients we can get. Gluten-free. Dairy-free.

Lady Bird Lake Clean-up Day

Love the Trail at Lady Bird Lake but hate the styrofoam washed up along the shoreline? You can join The Trail Foundation and Keep Austin Beautiful (KAB) in a focused effort to improve the Trail and Lake. Volunteers will meet to clean up the lake along the shore's edge, or from the water by kayak or paddle board. Volunteering is free, but spots fill quickly, so a reservation is required.

Basura Bash Annual Waterways Clean-up
- Saturday, February 25, 8 a.m.- 1 p.m.
- Free, but volunteers must register for a specific waterway
- Various lakes, streams and waterways in San Antonio [San Antonio]

Basura Bash is the largest single-day waterway clean-up in Texas, and last year's event drew over 2,000 volunteers! Clean up areas include: Tributaries within the San Antonio Water Shed such as segments of Salado Creek, Indian Creek, Leon Creek, Olmos Creek, Zarzamora Creek, Brackenridge Park, Martinez Creek, Woodlawn Lake and The Headwaters of the San Antonio River.

Beer Braised Bratwurst and Greens

Ingredients

Beerbraisedbrats 06

  • 1-2 tablespoons butter
  • 4 links of any flavor local bratwurst
  • 1 large or 2 medium yellow onions, sliced
  • 2 cloves garlic
  • 1 bottle locally brewed beer
  • 1 pound dark greens, such as mizuna, mustard, kale, or a mix of these
  • Fresh ground pepper to taste

Instructions:

Slice onions. In a large skillet, saute onions in butter over medium heat for about 10 minutes. Meanwhile, peel and chop garlic. Add garlic and whole brats to the pan and brown sausage on all sides.

Pour in entire bottle of beer, turn heat to low. Simmer, covered, for 30-45 minutes until beer has thickened some and sausages are cooked through. While sausage is cooking, chop greens. Cook greens with sausage and onions for the last 5 minutes on the stove, until they’re just wilted. Season with freshly ground pepper.
